Frittata
Frittata is the most simple, quick-cooking and cheap food. It can be a great choice for breakfast, brunch or lunch.
All you need is eggs and anything you have around such as vegetables, onion, herbs, cheese, mushroom, tomatoes and etc to make a delicious & colourful frittata.
Eggs are excellent source of protein and provide essential nutrients such as Vitamin B12 which helps protect against heart disease, folate which helps to produce and maintain new cell, choline which plays a strong role in brain development and function, and Vitamin A, D, E, iron which is good for eyes, bones and cells.
Here you go my mum version of frittata.
Ingredients: 3 eggs, 1 tablespoon olive oil, 1/4 Salt & pepper to taste, 1 cup of carrot , spring onion and lady finger
Method
1.
Heat
up the non-stick pan with olive oil. Add carrot, spring onion and lady finger
and cook over medium heat for 2 to 3 minutes.
2.
Beat
eggs with salt and pepper and it pour it over the vegetables in the non-stick
pan. Cover and cook over medium-low heat until the eggs are mostly set. Preheat
broiler and place the pan under the broiler, broil 3 minutes or until the top
is bronzed and eggs are just set throughout.
